Just like printing everybody at a crime scene for exclusionary purposes, doing chromatographic (e.g., HPLC, Mass Spec, Raman Spectroscopy) analysis of the water will help to isolate any chemical artifacts from accelerants or other possible agents. I’d also guess it helps with identifying where the fire burned longest or hottest (due to thermal decomposition of the water-borne trace elements). Radioisotope backgrounds might be handy too with all that Carbon 14 sifting down from the rafters.

The logs from the constructions work company have apparently been released, and all electricity on the site was disconnected before workers left the site. So it cannot have been an electrical fire from construction.
It sounds like they brought their own electricity up there as needed.
